While Still in High School Chef James Started working as a Chef's Apprentice at Hilton Palacio Del Rio in San Antonio in 1980, this first job has lead to a career of 30 years with Hilton on August 6, 2010.
Chef's Hilton Career has taken him to many different locations such as Hilton Palacio Del Rio in San Antonio, Myrtle Beach Hilton in South Carolina, Rye Town Hilton in New York, Atlanta Hilton and Towers, Miami Airport Hilton, and The Flamingo Hilton in Laughlin where he was the Executive Chef serving 10,000 to 15,000 guest each day. He made his way back to the Hilton Palacio del Rio in 1999.
Chef James is on the Culinary Advisory Committee at St. Philip's College. The Hilton Palacio Del Rio is an approved training site for students from The Culinary Institute of America, St. Philip's, Johnson and Wales and local High Schools.
