Chef Littman, a James Beard recognized chef, is the executive chef at the JW Marriott San Antonio Hill Country Resort and Spa. Littman's philosophy for the cuisine at the resort is based upon using locally produced products and enhancing local flavors. The resort has plans to partner with many local farmers and ranchers to have them supply grass fed beef, goat cheese, olive oil and seafood. Littman also believes in the quality of fresh, organic ingredients. To keep with this, he has plans to build a small greenhouse with an organic garden on the resort property for use by the restaurants.
